so when thinning down with water, why not use the medium to thin down? what is the difference? thanks in advance!

They do indeed have very different outcomes I do water to thin down my base paints first layers And i do Lahmian medium for a more even finish on my 2nd thin coat I always use lahmian medium for thinning metallics Thinning leadbelcher or retributor armor with water looks like crap while with lahmian it looks good So use water for a cheaper easy thinning, and lahmian for a smoother finish
