One reason was that horses hadn't been bred large enough to carry armored men for quite some time.

They went from depending on Germanic tribes for their superior cavalry to completely outclassing them in a couple of centuries. Even the Germanics came to fear the Roman cataphracts

The late Roman cataphracts were direct copies of their iranic enemies - parthian,sasanian, sarmatians etc. They had no reason to develop heavy cavalry of their own because there was no comparable heavy cavalry in europe.

It is also important to note that, while the Western Empire "fell' in 476 AD, The Eastern Empire lasted until the 15th Century. In the 5th-6th centuries, the stirrup was introduced to Europe from China... Thus the later Imperial cavalry had saddles with stirrups which were a major improvement over their predecessors.

I think it stemmed mostly from the Republican era Equites. But i wouldn't call them weak. In the republican era it was quite the small unit and given the competition that they had they do indeed look lackluster. Numidians, Gallic, Germanic, Macedonian, Parthian etc. they faced and fought them all and the results weren't lopsided as one would expect. They're not best, but they were no slouch either.

True but in the Roman world it was renowned for these reasons 1. Cavalry helped start the Republic 2. Roman cavalry was known as elite able to defeat larger cavalry forces 3. The reforms of Gaius Marius led to him using auxiliary cavalry like for example: Numidian, Armenian, Gallic, and Germanic etc 4. Just take one look at the reigns of emperors Gallianius Claudius Gothicus and Aurelian shows how good Roman Calvary was

It was weak originally, they used auxillary cavalry like numidian, celtic and germanic, then copied heavy cav and horse archers from the persians.

The Romans were able to make up for their initially weak cavalry by using allied, mercenary, and auxiliary cavalry from peoples with a more equestrian culture.

The Roman army stopped when Constantinople fell. It was then some two thousand two hundred years in existence.

The use of the cavalry on ancient rome its different than the late empire, just see the punic war and how they prize and value light cavalry over late heavy cathapracts

Based on total war game stats, Roman cavalry isn't weak, it's just not as op as its infantry :D
