Oxtail Marinade:
2.2 kg Oxtail Meat (Ask Butcher to chop the meat into cubes if possible)
2 Spring Onions (Chopped)
1/2 Scotch Bonnet Pepper (Chopped - No Seeds)
2 tsp Chopped Ginger
3 Small Garlic Cloves (Chopped) Or 2 tsp Chopped Garlic
Bunch of Fresh Thyme
8-12 Pimento Seeds (Allspice) or 1/2 tsp Ground Pimento
1 & 1/2 tsp Black Pepper
1 tsp Ground Ginger
2 tsp All Purpose Seasoning
2 tsp All Purpose Seasoning]
1 & 1/2 tbsp Browning
1 tbsp Light Soy Sauce
For Stock:
1 Beef Stock Cube
3 tbsp Maggi Liquid Seasoning
Extras:
2 tbsp Brown Sugar
2 tbsp Ketchup & Maggi Liquid Seasoning (to add to gravy)
1 Small Onion (Chopped)
1 Whole Scotch Bonnet
1/2 Tin Of Butter Beans
For Spinners (Dumplins)
1/2 Cup Of Plain Flour
1/4 tsp Salt
Water
Cooking Instructions:
Brown meat for 10 mins / Add Stock and cook for 45mins - 1hr on a low heat / Add Onions and cook for a further 45 mins - 1hr / Add Scotch Bonnet Pepper and cook for 30 mins / Add Spinners and cook for 15-20 mins.
Total Cooking Time: 3 - 3 & 1/2 hrs on a low heat
