The eight lights symbolize the miracle that occurred when the maccabees rededicated the second temple after the Syrians destroyed it. The Maccabees only had enough oil to keep the menorah flame lit for only a day, but miraculous the flame lasted 8 days. The ninth candle is called the hamas’s which is used to light the others.
