Tom has been a Dedica godsend for me. I'm in the process of modifying mine to use the "Gaggiunio" modification. Everything is pretty much straighforward except for the pressure release valve, which the Dedica doesn't have. If you decide you want to "hack" your Dedica to a whole new level of control (pressure, temperature and profiling), check out the "Gaggiuino" project.

@@jasonng5194 I'm just going in blind. The first thing I did was build the version for an actual Gaggia Classic. I followed Tom's lead on where to install the pressure sensor. I had originally placed the thermocouple next to the pressure sender, but it wasn't very accurate. I found a nice spot on the boiler. The whole thing can be placed where the stock circuit board fits. Tom..if me providing these links rubs you the wrong way, let me know. Just a quick update from me. After watching your videos, I upgraded and invested in the Normcore bottomless portafilter, and the IMS 16-18 basket. Once I’d done this, it revealed my existing grinder was rubbish so I went for the Baratza ESP. Wow is all I can say. I know I’m using very high quality beans and I honestly think I’m making flat whites that are better than most commercial outlets. Not arrogant, just a bit of a tribute to the education I received here.

I bought a DL2TH26E pressure less basket and it didn’t fit the tamper and the leveler. It was too narrow. I sent it back to Amazon. Are there any high quality baskets that fit the 51mm tamper or should I be satisfied with my cheap baskets? In what way doe’s expensive baskets make a better espresso?

I bought a double baske by ims and a bottomless portafilter that you recommended for the dedica device. but when I put the coffee in and run the water, the syringe does not go as well as in your video, there is no cream and it looks watery and black. why is that and am i doing something wrong?

For those looking to upgrade the portafilter make sure you buy one that has the correct number of ears! For instance my machine is a EC885m and requires a 3 ear portafilter.

I have been following your channel since getting my EC685 some months ago. Started with pre-ground beans before getting a bottomless portafilter, manual grinder and scale as per your recommendations. It took trial and error to get the correct setting on the grinder before I got a smooth and consistent flow from the portafilter. Thanks for all your valuable advice. As an aside I am getting good exercise using the manual grinder 😂😂

Thank you! I've had my dedica for a year, and it completely died. I found a video on how to replace the pressure valve and water pump. Did that and then discovered the double espresso basket was shot. I've been wanting a bottomless portafilter anyway but these additions I'm getting them too! I'm excited for my espresso to be even better than it was.

I bought nearly the same machine + accessory without watching your video. However I bought the ec885 and I am getting brilliant milk foam out of the box. Because of a useable tamper and milk can included, those 50$ more is a good investment. The grinder which goes fine for me is a sage barista pro.

Just bought this model from a used marketplace that was barely used and looks mint. Made my first double with milk frothed. I had problems due to the Almost Lactose free milk (while it worked, it became too foamy), seems it would lack certain proteins to make the proper consistency of milk at the right temperature. I'll invest in those upgrade items this week. Paid $140.00 cdn for the unit, I'm already in love with it.

Im enjoying this machine and your videos were one of the reasosn i bought it. The only thing ill say is that people who use pre ground coffee can face issues. It needs a fairly coarse grind and a fine one will choke the machine. It's been difficult getting the right grind because i dont grind my own coffee so i have to buy pre ground 200-250 g at a time and keep trying

Interesting bit about how to turn the flashing lights off! I have been using an alternative I found out for years now, it’s as simple as switching the machine off, waiting 5 seconds and turning it back on. But yours is cooler and I’ll take it any day !

Hi there! I had a Timemore Chestnut, and ran that at 7-8 clicks. You just have to experiment and find the taste you like. Try to aim for a double yield of the coffee, in 25-30 seconds, and adjust to taste.

I am most of the time a black (lungo) coffee drinker, preferable bit stronger. after seen a lot of options I downsized it to the dedica en rivelia. 95 out of 100 just drinking black lungo coffe, and the other 5 a cappuccino. Just saw and hear working with the dedica is creating a bit more mess. like to hear your thought and experience. Thank you!

Great video. I just ordered the IMS filter as the one I have been using that came with my open portafilter holder from amazon has bowed at the bottom as described in the video. The result of this is too much flow and I have to keep dialing my grinder to a finer setting which still gives me too much coffee.

Posted a month ago. I just picked one of these up for $10. I have no clue what I'm doing and I very much appreciate this video. I will be learning and making some espresso. I have three already ground packs that probably aren't the best but hey they were free. I was just going to try to see what I can do without an espresso machine. I just so happened to come across this one today at a garage sale. Also got a very nice grinder to go with it. I don't know if it works yet. I know the grinder turns on. I'm liking the Colectivo shirt. I sure do miss Milwaukee and all the Colectivo locations

Hi Tom, I will shortly be returning to where my Dedica is and I have bought a beautiful new bottomless portafilter, a Matow palm distributor, and a nice heavyweight tamper for it. I am also bringing along my set of scales. All of these were bought after watching your informative videos! I am hoping to get an amazing coffee from the Dedica but will probably have to source some good beans and a grinder! I will report back if the old Delonghi non pressurized baskets that I had with my old machine will fit in the new portafilter. Btw , now having used the Sage/ Breville Bambino Plus and the cheaper Bambino machines which I have set up in similar ways, I would tell anybody looking to buy between these two machines that the extra money for the Plus is definitely worth it even if you don't care about the auto frothing ( I never use it) . Everything about the Plus is better quality than the stripped down Bambino which I would not buy again if I had to it over. Just my opinion.....

A quick update- the old non pressurized baskets did not work in the Dedica but the new bottomless portafilter had one included. My advice on the Bambino Plus being worth the extra over the more basic Bambino still stands . I have being using the automatic steamer on the Plus occasionally and it can be a fun time saver- works surprisingly well!

I have a doubt regarding the time with this machine. The preinfusion should be count as time for the expresso? It's about 4.5s in Dedica, so it will highly impact in the result if you are aiming for 25-30s.

My Dedica, which I bought last year in Athens, Greece, has a horrible steam wand--it is for clueless people and I haven't found a trick so that I can use it for microfoam which I usually easily make with other machines (I also have a gaggia but I modified that wand with a rancilio steam wand). Thank you for any steaming tips if one has the bad steam wand!

Hi. Thank you for the video. I have had a Dedica for a few years and thought I would upgrade using your suggestions. So far I have the naked filter holder and basket. I tried this and the results were really disappointing. I got an espresso that was much weaker than before and without a hint of crema. This is compared to using the standard pressurised basket. I have tried several times using store bought Lavazza espresso grind and note that delivery is fast (high pressure?). This is despite tamping as firmly as I possibly can. Can you suggest what I may be doing wrong.

I have the same problem! unfortunately in my country, Iran, coffee beans are imported and packaged in bulk and unprofessionally. Even the most DeLonghi sellers themselves do not know what coffee to use for the 685 espresso machine to give a good crema. They test the extract with a china cup so that no one notices its very low crema. The truth is that DeLonghi does not give good crema with every coffee bean. You have to search a lot in the coffee market and do trial and error to get the right combination🙏

It really seems to have a lot to do with the beans, and grinder performance. When I use Dinzler Roma, I practically never get side channeling.

I found these videos very helpful. I have a 685 and have recently bought the Normcore bottomless and the IMS H26 basket. I’m really struggling with extraction though. Hardly any crema - just a ring around the outside, some spraying, and for around 16g of coffee / 35g total liquid, in extracting in just 22 seconds. My Bodum burr grinder is on the finest setting too. Definitely using good beans and to be honest the pressurised baskets have always given me good results and great crema. I’m a bit stuck on what to try next….

Hi Tom, bought this machine week ago, I'm trying to learn about world of coffee. The problem is that shots are quick and with no crema. I'm using bottomless (generic basket) portafilter and coffee is grinded in the finest grade of a mellita grinder. With stock portafilter shots are quick but with a few more crema than with bottomless. Coffee was lavazza Rosso recently bought in supermarket and shots were well tamped. Thanks, great videos!

You’ll have a much more pleasant time if you source some freshly roasted coffee. Means you don’t need to grind so fine. Supermarket coffee will almost never tell you when it was roasted. Aim between 8-10 days after roasting, and then to use it before 4-6 weeks after roast date

Awesome video :) I think the best think about the pressure of these machines that people can use as a learning tool is if you're shot is choking or running super slow, you are more than likely above 9 bar and it will continue to just squish your puck until it finds a channel. For me, yucky or slow shots got better with a coarser grind size. This will limit your extraction amounts because you could potentially grind finer if you could control the pressure going beyond 9 bar and have nicer shots, but for

I’m amazed at the amount of crema you have on your coffee. I’ve followed the advice and changed grind level, water hardness, temp, tamp etc and each shot is terrible - very little to no crema and an awful taste. I might go back to the french press

Hi Tom. Thanks for video. I use bottomless portafilter but I cannot have crema as yours. I have Graef Cm702 grinder, even I grind at the finest degree, I take only black espresso without crema. My coffee dose is 16 grams at least. I tried with robusta beans but still same.

Hi tom, first of all, thank you. I have a DeLonghi machine and your videos have been very educational. I have one question about the leak problem. I use bottomless portafilter but some beans are making leak some beans are not. also, I using a timemore c2 grinder. do I need to adjust the grinder for all beans? Or do I need to change parts on my machine?

Do you mean channeling? You might need to check your puck prep, or make sure you are using freshly roasted beans. Your videos have been immensely helpful. I made some upgrade’s you recommend with great results. Question- should I be using a water filter cartridge with my machine (inserted in water reservoir) our water is hard. Or do I just descale monthly. I Britta filter my water.

Oops, didn't get everything on there! Here you mention the shower screen. Are you saying that the shower screen that comes with the Dedica I just bought isn't as good as replacing?, or snapping on a new shower screen (the two examples you recommend)? Why are the 2 new screens you are recommending better and how would they be replaced? I am enjoying the great quality coffee extractions I'm getting with the Dedica and am really excited about making other Italian coffee recipes. Thanx!

Just a pair technical question, -in a single basket do I have to finer grind settings to hold the 30 sec brew -time but the bitterness belongs of the fineness of the coffe. What is the best way with a single basket? - do you recommend the paperfilter under the coffee in the basket? Your videos are very helpfull, Danke!

Servus! Yes, I find that a finer grind is necessary for single shots. The jury is out for me whether or not to use paper filter. You have to choose yourself...I think it removes some mouth feel, which I prefer to preserve. Cheers!

Very informative, learned a fair bit so thanks for that. My question is the following. Are there options out there that will let you brew in 200+ ml cups (like Nespresso Vertuo 230ml) using your own ground coffee? I'm currently using a Vertuo pop but reusing the capsules and filling it with my own fresh grounded coffee blend. When it works it tastes great but the machine is a hassle to work with this way and has lately been causing a lot of problems. I guess the result I'm looking for is like a big big lungo. I'm not after "Americano". I hope you or someone else can give me some pointers, thanks in advance :)

One question I have been struggling to find an answer to is whether or not you can get a good shot from the Dedica using Illy espresso ground coffee? (I appreciate you can get better coffee with freshly ground coffee). I see a few people complaining that the Illy espresso grind is super fine but would love to hear your experience

Probably not, because that pre-ground is usually MONTHS old, and therefore has lost its freshness even before opening the bag.

Could you please advise me if you get a chance? I have an ES885 and a Rommelsbacher EKM 500 coffee grinder. Everything was fine, but recently the espresso extraction time has dropped to 15-16 seconds (coffee weight 16 grams, output drink weight 32 grams), even with the finest grind setting (as indicated by the grinder). What could have caused this? I was wondering if the grind adjustment might have broken and it's not as fine as it should be. Could the pressure in the machine have changed (suddenly increased)?

I had this mashine for 6 years now. Its a great beginner espresso maschin as long as you spend some money on a good Coffee grinder. A few days ago i stepped up espresso game and ordered a quickmill pippa 4100. I cant wait to enjoy my first espresso❤

Hi Tom, thanks for this great video! The problem I have is that I always taste water in my cappuccino (even though espresso doesn't taste bad). I noticed that my steam wand always constantly releases a little water while steaming (about 5-10 ml in 20 seconds). Before steaming milk, I always release the water first. Please tell me, is this normal or is my coffee machine defective?

Excellent review! The ability to exchange stock components for quality aftermarket ones is something that is on my checklist of potential espresso machines. It seems like espresso machines within a certain price point may have a greater threshold for variance in quality control. When you were discussing the cheaper basket and then using it, I noticed at 11:09 that the compressed coffee puck had pulled away from the side of the basket in the lower right hand corner (by your thumb), and then the subsequent channeling when it came under pressure, which makes me wonder if the basket wasn't perfectly round to begin with, or more likely that "2" stamped into the side had enough of an indent, to push against the side of the tamper. Either way, replacing the stock basket seems like a requirement because this would drive me crazy.

Love this video, I realy like to see comparrison this machine with Ariete 1381. It looks like it is the same magnufacturer as Delonghi, so I am pretty sure you going to get more from the Ariete 1381 compared with EC685 for the price.

No, the Ariete looks like the standard chinese model, like the Gevi 20 bar, Silvercrest SSMS, or Koenic. I think those all come from the same off the shelf chinese supplier. Not the same as Delonghi.

You'll need a single basket for single shots, at least that's what I find, because there's too much head room above the puck if you underdose in a double basket, and the shot runs too quickly. Cheers!

Another question is if the original tamper (that comes with the Dedica Arte) fits the IMS basket; I've read it's so tight and many people get problems with that. Howdy! You can use the IMS, but you'll have to remove the plastic insert in the PF. Tamper should fit fine, in my experience. Cheers!
