For the cockroaches thing, it's because they actually have "micro-brains" all over their nervous systems, allowing them to operate without the brain in their heads. As for Mike the Chicken, I actually read about him once. The reason he survived for so long is because some of his brain stem was still in his throat, which was apparently enough to allow his body to function. He died because the tube that his owners used to clean out his throat and prevent choking was accidentally left behind at a fair that they were visiting, and he chocked to death right there in their hotel room.
