Unfortunately I have to agree with you, when I'm absolutely positive we would never agree on anything else. It's only not okay to make jokes about specific groups at specific times. It's fine to mock an Irishmen or Italian on the Simpsons, but if you are Asian, South Asian, or certain other groups it's a no go. The double standard absolutely sucks.

Have they ever done an episode about Otto's dad? Or grandfather, if that is the time jump they are offering, @ 1:04:47, the dude with the red headband on standing behind what looks like Grandpa Simpson. Not sure if it was just a generic stoner looking guy at what looks to be something similar to Woodstock, but the similarities between him and Otto are striking.

McFarland wasn't upset with the Simpsons. He was mad at the Fox executives who wouldn't let him have the joke. I know people who have worked on both shows in a very background capacity, and absolutely no one has ever said they hold any kind of ill will for either side.
