Hi Jim, quick question: if the ice forms at the top and not the bottom of the tank, why would the tap at the bottom freeze and break? Why does ice form at the top anyway, given heat rises?

There's water inside the valve that sticks off the side of the tank. That's where the freeze and break will occur. It's the most susceptible area. If it breaks, you'll lose your water.

I see, thanks. Any idea under what conditions an insulated tap will crack from ice expansion

No. Typically, if you wrap them with insulation and then cover them with something plastic to keep them from getting wet, it will do the trick.
