Hi You try it and when the watermelon rind cools it down then sugar coat it, if the weather is too hot then coat it twice.

It depends on the weather, if your weather is very hot, then cool it first, roll it in sugar, keep it in the fridge, then again and roll it in sugar again. Then this will be the perfect candy
