A bit of history The first modern recipe for macaroni and cheese was published in 1769 by Elizabeth Raffald in her book The Experienced English Housekeeper. The recipe calls for a Béchamel sauce with cheddar cheese, macaroni, Parmesan cheese, and baking until bubbly. Macaroni and cheese was introduced to the United States by Thomas Jefferson, who brought back recipes and a pasta maker after visiting Italy. Jefferson's enslaved man, James Hemings, is often credited with introducing the dish to the United States. Hemings was trained in France and brought back his own spin on the traditional French dish, which he called "macaroni pie The origins of macaroni and cheese are likely in Europe, with some recipes dating back to the 13th century.

That was great Momma and Josh. To save time if you have a food processor with a grater attachment you could grate the 3 cheeses in 5 to 10 minutes. My sister has one of those rotary graters that you lock onto your bench top, cut the cheese into blocks to fit into the feed section and you turn the handle to grate, which will halve the time of using a hand grater and save your fingers.
@dwmillzКүн бұрын
It sounds like Momma likes the smooth cheese consistency. Momma prep the night before, use regular paprika, use 1/2 lb (pound) each cheese and use Velveeta (cut into cubes) during the melting stage. Allow to cool down, then cover with plastic wrap, and put in the fridge. Next morning (or when you're ready to bake it) pre heat oven to 350 degrees, take off plastic wrap, and bake for 35 minutes. Broil for 2 minutes. See if that works best for you.

I'm happy to see people using roux again. I personally feel that the sauce you end up with when you make a roux is much creamier and more stable than if you don't. It reheats well, and doesn't get all nasty and greasy. This recipe looks really good, very rich. I call this "side dish mac & cheese" because it's so heavy that I only want a little bit.

The time you spend making a dish is the amount of love you put into it. Great vid.

Homemade Mac and cheese is the only way I will make it. Using block cheese is really the best way. When I make my roux I don't usually use evaporated milk. I add heavy cream or just milk. The pre shredded makes it grainy. I also don't use as much cheese. I usually do 8oz of Colby jack and 8oz of like a sharp or mild cheddar. Really whatever cheese I can get. I use regular paprika, salt , pepper, garlic powder and onion powder. Sometimes a little Cajun seasoning cuz my family likes it. You can really do it how you want. It's really personal preference 😊 Love to all❤

Sounds good 👍 What about mustard?? I think it's good in mac n' cheese 😊 I also like a couple of shakes of Worcester sauce ❤

It shouldn't take 2 hours for baked mac. More like 30 minutes. Lol. But I know it was your first time. It shouldn't be a dark color like that, but to each his own. Everyone makes it different. I have tons of videos on how to make it on my channel. Glad to see you using seasoning 🙂

Hey Josh and Momma, just a tip for the cheese. Buy all the cheese in bulk and put them in a freezer zip lock and throw it in the freezer and use as needed. Enjoy 😊 Edit. I meant to freeze shredded cheese and put in freezer

It has to be shredded to freeze but I do it all the time in sizes for my regular recipes and use my food saver.. it works perfect ❤

@tamiflo ah yes, that's what I meant. I edited my comment to include that. Thank you!

Love seeing Momma perfect her recipes after all this practice. & tip for adding flour is to stir it in cold, whatever liquid you use so it doesn’t cook 👩🍳

I’ve watched enough of these videos to understand why Josh is SO ecstatic. I’m happy for them! This I would totally make, but with half the cheese 😂 that’s just too much cheese.

Agreed. I think it’s so unnecessary. For a POUND of a pasta. A single pound. It’s crazy.
