Actually you can do it without a bonus chest. In mudflap’s video, he downgraded his world to 1.14 for patrol emerald drops, and then went back to the version he was playing on before to trade the emeralds with a wandering trader for an oak sapling, providing both wood and apples.

Pro tip if you only have one water source, place your water in a 2 deep hole (on the top block so it flows down) bonemeal the bottom of the hole and voila, 2 water source blocks. Works with kelp as well.

How to do it without a bonus chest: Patrols spawn after 100 days of gameplay and once you see one, kill the pillagers ( you can lure them into a killing chamber because we have nothing) get five emeralds then wait for a wandering trader to spawn, trade with it for oak sapling so you can get planks and apples!
