Honestly I think I would like to see a battle with no twist or gimmick. Just a pair of poketubers being able to pick a dream team of Mons, Moves, and Abilities together and see what happens. Or a mirror team challenge where both people have the same mons and it comes down to different natures, moves, abilities etc. To make the difference and see who uses their set better

Catch 12 pokemon and the first letter of there name is the letter you have. Then spell out a pokemon's name with those letters and that mon's type and Abilitys are what you have to work with. So a Rayquaza would give either the dragon or flying tera type and only the teams normal Ability or Rayquaza's ability. You could also add that 1 mon on the team can have 1 of Rayquaza's moves.

Do a RNG catching challenge for the pokedex where computer randomly picks a number within the pokedex within a time limit. Whoever catches the exact number pokemon gives it any ability and illegal move. Whoever catches closest to their number gets to pick their ability. Whoever gets 2nd closest gets randomized ability or IV reduction.
