THE BEST EGGS BENEDICT EVER - NICOLE'S
4 servings
*Candied Bacon*
8 strips of bacon
2 tbsp. brown sugar
1 tsp. black pepper
1 shot brandy (or bourbon)Preheat oven to 400ºF and put a wire rack on a lined baking sheet. Lay bacon strips on top. In a bowl, mix together brown sugar and black pepper. Evenly sprinkle sugar mixture on top of bacon and drizzle with brandy. Bake for 18~20 minutes or until bacon is crispy and caramelized.
*Hollandaise Sauce*
3 egg yolks
1 tbsp. lemon juice
1 tsp. dijon mustard
pinch salt
1/2 cup butter, melted, Whisk egg yolks with lemon juice, mustard, and salt. While whisking, slowly stream in melted butter until incorporated.
*Eggs Benedict*
4 English Muffins, Split & Toasted
1 tsp. Karasumi Powder
Candied Bacon
4 Poached Eggs
Hollandaise Sauce
Pinch Cayenne Pepper
Chives, Diced
EGGS BENEDICT DON FIT FOR A QUEEN - ASH
*Pork Belly*
2/3 lbs of pork belly
salt to taste
pepper to taste
sugar to taste
hoisin sauce to taste
Preheat oven to 450 degrees. Pat dry pork belly. Rub salt, pepper, and sugar on it, to taste. Put it in the oven for 30 minutes, and then lower the temp 275 for an hour. Brush with hoisin sauce.
*Hollandaise*
1.5 cup butter
3 egg yolks
1/2 tsp Karasumi
1 tsp yuzu extract
dash of soy sauce
Using an immersion blender, combine all ingredients EXCEPT butter together. Melt butter so that it is HOT. As you blend, slowly stream in hot butter to rest of mixture. Continue to blend until you have a nice, thick sauce.
*Eggs Benedict Bowl - Assembly*
1 cup sushi rice + 1/3 cup shio kombu
3 tbsp shredded shiso leaves
1/3 cup shredded cabbage
2-3 strips pork belly
1 Tempura-Fried Poached Egg
Hollandaise
Minced green onions
Fresh ground Pepper

Pro-tip: Broken hollandaise is easy to fix. Add a tablespoon of hot scalding water and whisk, whisk, whisk. If needed, add a little more hot water a bit at a time and whisk till it's smooth and creamy and then pour on the eggs.

It was so cool watching you cook, Nicole! I usually wait until last to do my Hollandaise, precisely so it won't break or get stodgy, which it so wants to do. I think the tempura egg they used in Food Wars wasn't actually poached before frying. It was frozen eggs coated with batter then deep fried, which makes the yolk still perfectly runny. The one chef ash made wasn't runny anymore.
