It’s awesome that you wanted to learn and show authentic Khmer cooking to the world. It’s a great video. As you eluded to, much of Khmer culinary skills were lost during the genocide and Cambodian foods have evolved to adapt to the needs and ingredient availability. Food preparation is also very regional. For example what you had was not beef Lok Lak. It was just a stir fry beef with morning glory. Authentic Khmer Lok Lak is a dry pan seared cubes of black peppered beef fillet (medium rare and tender) served over slices of green tomatoes. Black pepper and lime sauce is used for dipping the beef. Marion’s Kitchen KZbin channel does a great job on her Cambodian Lok Lak cooking. Fish Amok has also evolved to speed up the preparation and cooking time. It used to be greener in color instead of red. Sliced Noni leaves were used as part of the main ingredients. It used to be steamed in an enclosed pyramid shape banana leaves. (BTW, the picture of the Lok Lak you had before used to be called Beef Stuck).

Hi! Thanks a lot for the insight. Often food and culture goes hand in hand, and it is so interesting to learn about the regional varieties in food preparation, and how they have changed over time. We really love how Cambodians take pride in their culture, and especially Khmer food. It has it's own unique elements and style that makes it a unique form of cuisine, and we are glad that some day we can cook some of these dishes for our families in another part of the world.

The food must be great when everything is freshly picked from the garden. I love those greens in the beef lolak but they don’t have them in the US in normal supermarkets. They’re also really good in a sweet n sour soup.

Yes his English was excellent. In fact he told us that he learnt it during his time in Thailand, when his family had to take shelter there after the war. He has done an amazing job learning and mastering the language, and now his son speaks great English as well. And he was such a good teacher as well, very patient and kind 😊

The comment about khmer people doesn't eat breakfast before the khmer rouge make zero sense to me because both my grandparents who live in Phnom Penh for a long time before the war said that everyone having breakfast before going to work in the Songkom era.

The Khmer guy that says Cambodia does not have a market before the war is wrong. in the cities, khmer people always went to the markets to buy fresh products/produces to cook. I don't understand what he meant.
