To be honest, he wasn't too far off with adding the flower to the eggs. I do flour, eggs and club soda as a wet batter alongside the regular flour as an initial coat so the wet batter has something to bind to, and then seasoned flour for the end coat and then straight into the hot oil (or fryer if you have one). Their process is just dredging.
