The name is Oh Se Gae Hyang, and it's a traditional but fully vegan Korean restaurant on Insadong-gil.

I wouldn't say "developing" as much as "transforming" into a modern federalized nation-state, compared to Korea which clinged onto its monarchy and had barely declared itself as an equal sovereign to China (ironically through the help of Japanese intervention).
