Looks interesting. Easier way to roll is hold the ends of the parchment paper and just gently pull it over until it’s all rolled up.

Maybe smaller and less cheese, when the cheese cooks it releases a lot of oil and moisture, which might of made it not cook as well.

Makes sense. I also should have put foil down so the bottom didn't burn.
