For the pumpkin spice ones, definitely white chocolate. The sugar and spice sprinkles would show up really nicely, and the flavor of the cream wouldn't get lost in the milk or dark chocolate. IMHO.

Dark chocolate is really really good with spice though. I have a jar of "chocolate spice" in my cupboard that I use for dark chocolate truffles, hot chocolates (made with water, cocoa, spice and little sugar), and even stuff like brownies and chocolate sauce. I mean it's been made with spices since the colonies. Originally, it was mace, clove, and true cinnamon (not cassia), though, which is what I have in my jar. But pumpkin spice does the trick too.

Man, those blue raspberry ones are so nostalgic to me because that was one of my favorite flavors growing up! Admittedly, though, it was mostly that I always wanted blue candy and the only flavor was blue raspberry lol the flavor wasn't actually my favorite but I love the color, so I always ate it lol Then I learned that in Japan, their flavor for blue candies is "soda" flavor. It's sooooo yummy! I miss it lol but regardless, blue candy is great

Why not buy a set of bed risers so Max doesn't have to do the splits while pouring creams? You can get them at Walgreens etc. It would raise the cornstarch table a good 8 " higher. The table wouldn't roll off the risers because the casters set inside the top of them.

The raspberry creams are so pretty. They remind me of the darker forms of turquoise. If you weren't covering them in chocolate you could just use an extremely dark chocolate and make the veins like turquoise stones.
