I used to make ground beef jerky for my dad because he loved jerky, but had dental issues and wasn’t able to eat regular jerky. Everyone ended up loving it so I continued to make it whenever we get a ground beef from my sister’s husband(his mom raises beef cattle so we usually get in on the purchase when they butcher their older ‘hamburger’ cows). I have found that I prefer to roll out between layers of parchment instead of using a jerky gun. I roll it thin covering most of the tray then cut into strips after it’s dry.

Genius. I make a TON of jerky, but the most time consuming part is cutting the meat. Ground makes way more sense and your hack is definitely going in my toolbox.

Thank you, never thought of doing it that way, me and the jerky gun aren’t friends, plus I like it really thin and the gun comes out a little thick for me, going to give it a try!😊

I have started using a cookie scoop and a tortilla press to make jerky “rounds” in between a plastic zip lock. I like this method better than the gun. Great video thank you.

We use parchment paper instead of the mesh, then we store the parchment in the freezer for the next batch. we haven’t tried beef yet, but venison. Thank you for the video, it inspired me to make another batch😎

I use a jersey shooter brand gun. I also use the 98%lean ground beef and add sirloin or whatever roast is on sale. I run the roast through a food prossor, then mix in my stand mixer to get a great texture for the gun.

That might have helped break this last batch up a bit more for me - it was just so weird how every other one worked so well..and this just didn't! LOL

I made jerky a couple years ago. It turned out good. I kept it in the refrigerator because I was a little scared. I have a ton of ground venison so I used that.

Do you need to put in 'cure'? I keep mine in the freezer. I can understand it if you kept it on shelves.

my brother makes a very tightly packed loaf pan. maybe half the depth of the pan. put it in the freezer for an hour or two so it is easy slice. You have to play with the timing and that cold cold loaf is easier to slice. good luck!

Good idea.. If I need to do thin slices of any meat I freeze it to a sherbet style consistency and it slice a lot easier... @@carolschedler3832

Do you have a dedicated dehydrator for meat. Can you dehydrate something like fruit after the jerky without the fruit tasting like the meat marinade?

My dehydrator only goes up to 158 degrees. Can I do jerky in it?

Yes, but I wouldn't do chicken jerky for your consumption unless you also put it into the oven at 275F for 10 min or so.

Is it absolutely necessary to buy one of those guns? Why can’t it be shaped by hand? I’ve never tried ground beef jerky. But I’ve been making jerky for 30 years.

No one suggested that you have to ;) There was a glimpse of a few I did by hand, and you can also roll them between two sheets of wax or parchment paper and use a knife to cut the strips. This was a gift, lots of people want to use them, I'm showing them how they can be used and some issues. That's all ;)

In the video you said your beef contained a lot on "cine". We turned closed caption on after listening several times. About 4:50. Not sure what this is? Google says it has to do with movies?? My best guess is cartilage?

Sinew being muscle casing or tenden and ligature portions of the muscle. The sinew jambs my grinder too. Best to trim out or off if you grind or process your own meats. I no longer suggest buying hamburger in the stores. They are a questionable product altogether now. I buy good beef cuts and separate the fat, meat and casing/tenden/ligament. I grind separate and then add together.
