Advice: Try getting potential unleashed or Beast and doing the Supreme Kai training at Orange Star High. The training teaches some combos including stamina break one's and the transformations are pretty damage heavy with Unleashed being quick to use while Beast does more damage you take way more and it's a long transformation. Also to break stamina when they do ultimate's in the early part of the Ultimate's charge up hold down the Y button for a charged hit or do a back dash.

In xenoverse to interrupt an ultimate there are several ways you can go about it, first you can do a heavy attack on the targeted enemy, this will not only interrupt the ultimate but break their stamina, but this also applies to opponents who are blocking, you can also double tap the burst dash button to break it, to this only works on ultimate attacks and as you can probably guess there are exceptions to theses rules, the third and most risky tactic is to out damage the individual, when either guarding or in an ultimate you can theoretically guard break an opponent, much like how damage chips away at health it also chips away at stamina, this applies to ultimates as well, however I would not recommend this at all because they have to be at really low stamina, the attack has to be strong enough to do any damage to the stamina and you have to be in position! Also if your breaking by doing a heavy attack I recommend being behind your opponent to do so, though it is possible to break from the front if the attack hits you it becomes impossible. So try to break it from the back so that if the attack goes off you opponent is vulnerable to it, you can't break an ulting opponent with a regular stamina break so use these skill to punish random ultimates.
