for the gold farm the cobbelstone layers were actually supposed to be magma cubes which spawn lots of zombafied pigmen and only them

For the enderman farm, you need to build very big platforms, and to make the endermans come to the place you'll kill them in, you have to spawn an endermite by throwing ender pearls. Watch a tutorial on youtube, and you're farm's gonna be better

What you did wrong with the piglin/gold farm is that it works best while the platforms are magma blocks not cobblestone. For the wither skeleton farm put an iron golem because it is better than a piglin to lure them in. Also you should put 1 block between tnt when netherite mining
