As a child, I used to eat pickled pigs feet all the time. I've eaten pickled pigs lips as well...not as much a fan of those. Pickled sausage and pickled eggs are also good. I've had the canned brains...not bad on toast. It came from a time when there was meat rationing by the US government. Farmers had the meat in abundance but the government regulated the sale of meat (claiming the need for meat scarcity was due to the war) to the point a black market was created and people were imprisoned for buying and selling meat. Offal was one of the few items which was allowed. The government even had a program promoting that Americans should eat more offal. The government also had another program telling people they should use their rations to make gifts for the troops to lift up their spirits. The canned brains are treated with curing salts before canning...so they stay pink and have a Spam-like taste.

Picked pigs feet is mostly a southern/African American cuisine. As slaves we had to eat parts of animals that the owners didn’t want to eat and we turned them into dishes. Chitlins , pigs feet/lips , hog mauls, and chicken wings were a result of this treatment

You guys were babies about the pork feet. I grew up with homemade pickled pork feet and they were wonderful- made with pickling spices and a vinegar gelatin base - amazing. However recently I tried the one you had that is all pink and it was not good, but not as bad as you made out. Yeah you must have had bad century eggs because they are not bad and can be like blue cheese in some dishes especially in congee. You guys should do more asian meat snacks. Shrimp chips, Crab Chips, Fish Skin, Squid Jerky, and tons of canned and dried fish and shellfish. Lots of people in the world dip in vinegar or hot sauce and they become tasty. Other things to try-pickled pork skin, chitlins, the green entrails from abalone, crab roe or tomalley. Also if you can get a balut that would be fun to watch. I am open minded about a lot of food, but I do know I can not do that icelandic ammonia fish stuff. I just can not put that smell in my mouth, my whole sense of survival kicks in and says NO NOT FOOD, but many love it. I give high praise to you both for man upping on that one.
