Hope you & your family are well. Un chiste para ti. This joke is from when Bullfighting was still common in Spain - 3 Scotsman Andy, Bob, & Charlie go on holiday to the Costa Blanca. After a few days Andy gets bored with sunbathing, & asks the other 2 if they'd like to try a little culture & go into the main town to grab a bite of traditional Spanish food & see the sites. They decline, so he goes on his own. He sees a huge round building with a restaurant attached, so he goes in for a meal. He asks the waiter, Manuel, for a recommendation - He suggests the day's special. Andy says, ok. 15 mins later Manuel brings out a plate with 2 large meatballs in sauce. They taste delicious, much better than the tinned stuff he'd had before. He asks Manuel what the dish was. Manuel explains that the large building is a Bullring; when a bull is killed the retaurant gets the carcase for its menu. What he'd had was the bull's testicles. At first he feels sick, but realizes it tastes very good. So he decides to play a trick on his mates the next day, bring them to the restaurant & get them to try the 'special'. But only Bob agrees to come, & is served the 'special' 2 large meatballs . When Andy explains what it is, Bob is horrified but agrees that it tastes very good. Bob suggests they really must play the same trick on Charlie the next day. This time Charlie agrees to come just to shut them up. Andy orders the 'special' for Charlie from Manuel. 15 mins later Manuel brings a plate with2 very small meatballs on it. Andy says - "Haw Manuel, how come the meatballs are so small this time?" Manuel says - "Senor - sometimes the matador, he no always win."😄

Absolutely loved it ! Like James, I try to get my friends to get out of their culinary comfort zone. Phil is such a good sport for trying and keeping an open mind. I hate those who “eat with their eyes” and refuse to even try new things. My basic rule is to try anything as long as it is not moving in my plate and is hygienically sourced and prepared. Let your palate make the last decision . I have had my share of unusual treats in Asia, and my share of upset stomach aches; but totally worth it ! Enjoyed the video; Phil shall be your “plan B” when Yoli can’t make it !

If Phil is really Greek then he is pulling your leg, cause tripe, kidneys, cheeks, braided intestines, sweetbreads, even snails are very common in Greece. In fact, they are local delicacies, cooked somehow differently though. For example, tripe soup is served all over after hours' places for those with hangover after heavy drinking. Braided intestines of lamb filled with its kidneys, sweetbreads and liver is a staple at Easter. It is called kokoretsi. Snails are very common in the island of Crete cooked in tomato sauce with onions and extra virgin olive oil.

I should add... the "head" at the end was actually really a great "coup de grace" for living with what we kill and eat. We should know what we eat and this demonstrates just that... I believe we're freakin lucky to do this and it should be kinda difficult to pull an animals head apart to eat, its ok Phil to feel weird/ concerned about this. But, moreover if we accept processed to non-recognition foods we should certainly come to grips with the animals that gave their lives for your sustenance. Adventure in your eating and challenge your commitment to meat eating by taking in the whole of the animal. Ethically I think its our responsibility... and its delicious. It also will naturally reduce your disassociation with what you eat and have you eating more simply on most occasions. I love the European tradition of food, but Spains really "knocks it outta the park".
