Dried Mangoes are indeed sulfured, I learned after you asked. From WebMD: “Dried mango often comes in slices, which may include sulfites to increase its shelf life and keep the mango soft. Organic varieties can be stickier and more difficult to eat. Freeze-dried mango is crunchier and often free of added sugar. Mango that is candied or crystallized is steeped in a mix of water and sugar before it’s dried.”

Just an FYI that there are many kinds of pestos! It basically *is* just an amalgamation of ground ingredients lol. Basil pesto is the most commonly available in North American stores, but it's just one of many pestos, many of which do not involve basil at all.

That lemon pesto did look gross…but there are actually other types of pesto in Italy that aren’t very green/basil-y! Calabria has a pepper based pesto that’s tasty. I think pesto generally just means “sauces that is pounded” because it’s traditionally made in something like a mortar and pestle. Plus, you can make pesto with all sorts of herbs/greens and nuts too! Garlic scape pesto is really good for example

"pesto" is actually (or meant to be) a generic term! pesto just means "pounded". the basil/pinenut kind is pesto alla genovese specifically. But you can riff a lot with pesto. I like to think of it more as a method, and not a name/recipe. I've had pestos made with walnuts, cashews, and peanut (+ various herbs/cheeses) and they were all delicious :)

I feel like it's important to note that the cacio e pepe puffs have been a thing at trader joe's for over a year (at least in the northeast) and are very not new and that TJs has an actual pirate's booty dupe (white cheddar puffs) -- even with my nitpicky details i love these vids and love y'all and growing up with y'all on my computer screen :)

I’m a vegetarian who loves Mexican food, so I was so hopeful when I saw the vegetarian enchiladas, and was horrified when I made them 🥴😅😅 If you liked the cacio e pepe puffs, but want a true pirate booty dupe, they have a big clear bag with blue designs on them that are standard cheese puffs! Yes, dried mango, and dried fruit in general, often has sulfur in it. Usually if it's sweetened. I prefer the more natural kind, so I get unsweetened and that usually also doesn't contain sulfur.

TJ’s actually sells Pirate’s Booty but it’s called World’s Puffiest Corn Puffs. They were also sued by the Pirate’s Booty company because the original packaging was too close to the name brand packaging. They had to change it to the packaging they have now.
