Was recommended by a Japanese colleague to watch the Golden Kamuy anime and learned so much about the Ainu people and some of its cuisine. The one name of the dish that still sticks in my mind is chitatap and hopefully, I can go visit and try it out

I wish I had made more clear that the food was really good. It's very unlike other Japanese food, and well worth the experience for something that doesn't get a lot of attention.

It felt like a mix with the game meat (bear, deer) being smoked/steam cooked and the fish being either raw or cooked as part of a broth.
