excellent job as usual. I started using Grill Grates a couple years ago and have converted my Gas grill, my camp Jumbo Joe & my larger Kettle charcoal grill to use only the Grill Grates on all. The consistency in heating (and yes these get crazy hot) is perfect, they do help to spread out hot spots per say and flare ups forget it, such a great job managing flare ups. Prime Rib is my favourite to do on the grill.

I used Montreal Seasoning forever. Then I found the incredibly versatile seasoning from my favorite Steak House, St. Elmo, located in Indianapolis. I’ve found the really big containers of St. Elmo Seasoning at my local Sam’s Club. If you cannot locate it, it can be ordered online. It is by far the best seasoning for beef that I have ever used. I hope you give it a whirl. You won’t turn back...lol!

Looks great! But any reason why not to use the diffusor plate on the Summit? With that, you do have extra surface to use on the grill.

Roy, That would work too, but in this case I didn't need the extra space and was planning on doing the reverse sear so this gave me a chance to show off the versatility of the Summit verses some of the other kamados that aren't built to do 2 zone cooking at the same time.

Jason, thanks for the video. I love doing prime rib cooks. Something to consider: carve away the bones. It gives you more surface area to place rub on the roast for that magical crust that is the best part. While cooking gently rest the bones on the roast or put them somewhere else.

I have the Craycort grates. Love them. Bought another set for my Jumbo Joe. Got a few accessories for it too. I don't even use the regular stainless steel grates anymore. And I got the Grill Grates. Also a great product. I recommend both. I especially love using the Grill Grates on my Smokey Joe 14". Now I can spread the charcoal out and use the entire cooking surface and not have to worry about flare ups and burning the food.

Baby Back Maniac I bought the Grill Grates that fit the 14" Smokey Joe exactly. I figured If I need it on the bigger grill I'll use it then, but so far, the size for the SJ has been perfect for my needs. When I go to the Lake Front, I always take the SJ and always use the Grill Grates.

I use it every chance I get in the summer for quick meals just hanging out and every time I go to the park or lake front. I wish I could make videos like you guys but I'm really to busy(lazy). Funny I did the exact opposite. (I bought a silver and added the side vents from my old gold). I feel like we may have discussed this on the smokey joe rib video I did. If I'm repeating myself I apologize. You should do video if you have that desire. It is a HUGE amount of work though and costs a lot of money...and the adsense revenue will barely cover the cost of charcoal...SOOOOO......Yeah, do it!!! lol

Thumbs up for the lump wood charcoal. None of those briquette monstrosities. I've never had problems lighting lump charcoal. That's what starter chimneys and a piece of paper with a little bit of cooking oil on it lit underneath it is for.

I learned about your cold grate technique for revere searing and wonder how you would compare it to the upside down grill grates. Is it less likely to burn the seasonings then being over the charcoal without protection?

Both will get the job done. I like the CGT over any pan or griddle is because you don't get "bald spots" when the meat pulls away from the pan sometimes. Wish could post pictures here because I have a great one showing the difference.

nice cook. Looked amazing. What do you think gives a better sear, upside down grillgrates or a cast iron skillet? My dilemma with the skillet is I get the cast iron so hot that it will often remove the seasoning I have built up on it (2 charcoal baskets filled with a chimney on my Weber performer with the skillet right above it) But the sear on my steaks is amazing. Haven't tried upside down grillgrates.

I'm not sure. I think the big advantage to cast iron is it would hold heat better than the aluminum grill grates...but the grillgrates won't rust and are a lot easier to store (they collapse and stack together pretty well.) The GG are less maintenance too. I think you'd be happy with either. Sorry, I can't be more help. Justin

(If you use it, they will give me a small referral fee but i costs the same to you.) amzn.to/2gzltxF Just so you know. Shotgun mic are designed to work when they are less than 3 feet from your face. They don't "zoom in" sound like lens do even though they look like they should. (I say that because a lot of folks don't realize that.)They are actually designed to block out ambient noice. You'll also need a wind sock (aka "dead cat") if you plan on using a mic outside. To this day, that is the best value purchase I've made in audio video gear.

I will say that the flat side of those grill grates is the best char you can put on a steak from my opinion. I've done steak, shrimp and scallops and lots of other things and its killer for getting the job done right. I would very strongly suggest using a weight to help transfer that heat over. The only thing better than these I'd say is a direct flame that wraps around the food but these do add a lot more control.

You can go either way. If you do it overnight you give the salt a chance to soak in a little which adds a nice flavor.

Is there a benefit to setting up the Summit like a kettle, rather than as a kamado, for this cook? Was it mainly to use the GrillGrates at the end of the cook?

I really like 2 zone cooking when grilling because it gives you a safe space to dump off stuff when the outside looks good. Otherwise you have to keep cooking the outside in order to cook the inside. That's the main advantage with this but it's nice to be able to access the coals on long low and slow. The Summit is set up for that better than most kamados but this is easier.

Terrific video bud!! I wanted to tell you, I was almost dead set on a BGE, till I got to see some of your videos on the Weber Summit Charcoal. When I seen what I would have to spend on a BGE to get where the Weber is, it was something to consider. After going down to Ace, here in Denver is the only place that carries them, the choice has been kinda easy. There's far more value in the Weber than the BGE. I just sold my Texas barrel Trager cooker and Ive almost got enough saved for a Summit Charcoal. Keep the videos coming! Hope I will be able to get my own Weber before the new year. Cheers! Zach

I have another question. I pulled the trigger and bought my Weber Summit Charcoal GC. I know you live in Texas, what can i do to better maintain pit temp in super cold temps? Is the BBQ Guru worth it? Really?

The guru is really cool, but I rarely use it these days because I don't do overnight cooks very often anymore. (I just wake up early on long cooks). They are really fun to use though. That said, I can't imagine why cold weather would be an issue. It's not like a kettle or WSM. It's air insulated and it works really well. If anything, it may run hot the first few cooks until the cooker gets seasoned up around the vents. It gets better with use. Mine has great temp control now. Hope this helps.

Man that looks good. Im going to do one this week. I was thinking internal cook at 225-250f until internal temp is 125, rest for 20 mins then sear.

Yep. That sounds like a good plan. Let me know how it comes out. Make sure you start off with the best meat you can get your hands on. That makes a huge difference on these roasts.

Thanks Garvinque. Yeah, that's a great forum. I love it there. I don't think some of them like the Summit, but I can't for the life of me figure out why they wouldn't consider it a kamado.

Because it's made by Weber is my guess and they can't get past kettle even thought its not a kettle.

Hi. I am a new subscriber and understand that this vid is 3 years old and you may not see this question. I just bought the WSCG. What do you think about cooking the roast low and slow with the diffuser then transfer the roast to my gas grill to sear? Will I lose some taste on those few minutes on the gas grill? If I was feeding 9, I would do some kind of roast. Brisket if you have time. Ham or pork loin if you need something quicker.

Yep! Maybe in the spirit of your video I will post a (short) one of the outcome. Its 16 degrees here in Ohio right now and I cant wait to go out and fire up the Weber! Sorry to hear about your asparagus being over done. I usually put those guys on last because they do cook quick and I like them a little firm! I have an "impatient dinner table" so right when I take the meat off to rest 10 min or so I throw the asparagus on. P.S. Thanks for the link to the Drip ’N Griddle Pan! Its a little pricey at $70 right now but I have been looking for something like this for shrimp or smaller items that I would like a "grill" flavor but dont want it to fall between the grates! Great Xmas gift idea there!

This recipe did not disappoint! The only weird part was that the center of the meat cooked perfectly but the edges were still pink in some places...seemed backwards. I don't have a channel...yet!

This music is straight out of a Hallmark love story movie (don't ask how I know). This guy is clearing in love with his meat. (Sorry Jason, but you clearly have a good sense of humor). I have the WSCG and BGE and find the Weber to be far more versatile and easier to clean. Love the guys at snsgrills too. Their products are great.
