Not sure if this comes from the version difference, but when I extrude things to below like you've did in this and previous video, mesh got inversed(red on face orientation) So this always cause some bugs when I try deleting vertices and applying mirror modifier. I should've shift - N to recalculate normals at the first when making thickness.

loop cut only works on quads, knife cut can work anywhere on the mesh
