My wife and I started a pretty decent sized garden this year and one of things we planted was sweet potatoes. I've never heard about eating sweet potato leaves so this video is quite a find. I'm going to go out and right now and pick some leaves and cook them up tonight. We love eating collards and other greens like mustard greens so I hope it's a very similar. thank you.

@@pluckingtheinterwebs970 I think we must be towards the end of the season here in northeast Georgia because we haven't really had any new growth where we have the darker leaves available. Maybe we're getting close to where it's time to harvest the sweet potatoes. We just trimmed the ends of the vines where they were growing way outside the beds. Mas ybe this will spur new growth otherwise this might be something will have to wait and try for next year.

I want to thank you for this video. Yours was the first one that I came across a few years ago where I discovered that you can eat sweet potato leaves. This year I have a great many patches started and I'm going to trim back some vines tomorrow as some are creeping over their borders - and I came back to remind myself how to cook a big batch lol. I have the ones with the more ornamental leaves - they look so pretty.

Delicious! I love sweet potato leaves. I planted cuttings 2 weeks ago from a bundle of the veggie that I bought at the wet market. Getting bushier now, soon harvestable. I normally stir fry or cook as a watery soup or cook it in creamy coconut milk. When stir fry, I stir fry the leaves in pounded garlic-onion-chili-dried anchovies (or dried shrimp)-shrimp paste. These stuff coarsely pounded. As a watery soup, boil water till boiling, add salt, sugar, stock cubes (beef or chicken or fish), onion, garlic, chili and finally the veggie (I seperated leaves from stems and leaf stalks, add the stalk/stems first, then leaves). For coconut milk gravy, just add the coconut milk to the watery soup.

She did say they have higher amounts of oxalates than other vegetables/ leaves so cooking will reduce that amount. If you only sprinkle some fresh leaves on top of a salad as a garnish I suppose but it's probably best to cook them. Oxalates are somewhat controversial but they say that too much causes stones.

No better move ever. Get all of your favorite fruits that are zone appropriate and plant them ASAP and then move on to your fav vegetables. Might I recommend Annona trees and blackberry bushes? Grow All crucifers. hot peppers are perennial trees (shield from cold, I do this in pots because I live in zone 7) and are fantastic to grow year round because they just keep fruiting fresh chilis. off of a few 2$ seed packs from baker creek I have like every good type of hot pepper fresh on the plant year round for the kitchen, and for LOOKS-they are beautiful. Tomatoes are great for greenhouses and if your weather is warm enough, they will grow FOR YEARS! yes, the tomato is a perennial tree. Ever see how hard the stem gets at the end of the season???

I just blanch it. Then add diced tomatoes and onions. Squeezed it with calamansi. Then salt and pepper to taste. 😊

Thanks for all the info. I'm excited to plant my sprouting sweet potato in a large pot. Are the flowers edible too?

You have cactus and banana trees ? Southern US I presume, Zone 8 or 9 ? How does your cactus turn out ? I have found it wild in SC (Zone 8) but its dry and stringy. Store bought ones are softer and juicier. In the wild it also was grown in non watered and dry locations. Would it turn up juicy and not stringy if I grew it in a wet location. How does your nopales turn out ? And what soils and water do you grow it in.

Hi , thank you for sharing your recipe. I was wondering is this shoots are from regular sweet potatoes(red outside and white inside) or only the purple sweet potatoe shoots can be eaten? I've been growing regular store ones.
