When I was younger, I ran a Vampire: The Masquerade campaign with my best friend for 8 years. Sometimes we would have guest players, but for the most part it was just us. In that game, it actually made more sense because in the lore, vampires generally are solo anyway. In games like Pathfinder it can be done, but you have to give the player a bunch of characters because the combat mechanics always assume 4.

These types of games sound great, but I've never seen anything like them in stores around here. Hopefully they start bringing them in.

Personally, I dislike one on one sessions. I just consider it awkward, and have an easier time opening up to roughly three people. Player count is a very personal thing imo, both as a DM and as a player.

It's understandable to be particular about the number of players in a game - feel free to go with what's best for you!
