Is there a specific reason why tannins are not “welcome” in white wines, or why the twigs, skins and pips are being removed before maceration?

I am cautious about tannins....red wines. Chocolate. Coffee. Peelings of vegetable. Etc. Because for me ....tannins (I like the bite ). But refrain At evening. Are the bane of sleeping . And so dinner wine,for me, is white no matter the protein...

I understand, drink black tea then... No fruits nor seeds in black tea though. There are tannins in nearly all plants except maybe salads (wonder why, strange behavior of salads ! )

To taste tannins is easier as what you say (drink black tea): simply eat any sort of unripe fruit (grape, but also apple, pear, berries...) and you will soon learn how tannins react in your mouth !!! :))

Hi Arnould and thanks for your comments. Indeed tannin is found in many fruits in the skin, the seeds... But being able to discern tannin from acidity at that point is very difficult for someone trying to understand tastes, identifying and separating each. That is why black tea is the perfect example: there is just tannin... no acidity, no sweetness, no saltiness just the bitterness of tannin.
