Mmmmm… I’m leaning in several directions. Hopefully the weather’ll be improving soon. I’m looking forward to balmy Spring evenings and Summer evenings sipping a mojito. That means combining lime and mint. Both go well with the flavour of honey and can be added in secondary. On the other hand, something very fruit-forward and investigating the effects of fruit added in secondary only appeals as well. Either something strongly exotic, like passionfruit, or something deep and dark… blackberries?

Good ideas, will add them to the list. We've got a while before adding the flavourings, won't be done until the end. Any ideas that I think will make a good mead I will film, especially adding fruit to secondary.

1 gram of saffron and three cinnamon sticks.

I've never made a mead, only wine and cider,maybe its time to have a go. What about blueberry or Gorse,could you get a gorse flavouring?
