I mean they don’t have a very high water content so it’s anyones guess but I think they’d turn brown or just freeze my making a smoothie bowl

You can get freeze dried bananas and strawberries at the dollar store. I prefer the bananas as they turn into like a hard chip (they are called banana chips) and the strawberries tend to be sour and powdery.

Grace, if you love the freeze dried stuff and are curious about how the texture changes, then you should def try to make fizzy fruit by using dry ice! We need a whole section of „science with Grackle“!

My grandma would go through all of her male children and grandchildren before she found my brother's name. Poor kid is the youngest so my grandma would call him with every name possible in the family 😅

Andean natives of Peru have freeze dried potatoes for centuries, using the natural dry cold of the nights to freeze, and the intense daytime sun of the equatorial region to dry. They’re fantastic, and are the base of a traditional dish called Carapulcra. It’s one of my world favorites. If you don’t look it up and try it, you’re a big chicken.

Freeze dried fruits have been the saviour of my year! I've been shielding and not getting shopping very often so fresh fruit has been less easy to come by, but I discovered freeze dried is amazing 💙💛💚 never thought of freeze drying sweets though - such fun 😅

I love the texture of freeze dried food!!! I eat freeze dried fruit all the time and I looooove how it just melts in your mouth!! Ive never tried any other freeze dried food though

Look into moon cheese! If it's actually freeze-dried like I think it is, then cheese should get crunchy and is actually really nice. I know you can find it at starbucks usually!!

When I was 15, I worked in a chip shop and one day we got bored so we went to the shop and bought loads of stuff to deep fry.....turns out haribo and whole kiwis don’t fry very well 😂

As a scientist who has had to use a freeze dryer for precise experiments, a few tips. For things with high hydration, just freezing in a normal freezer may not be enough. In the lab we would actually freeze samples with liquid nitrogen so they freeze dried properly. Also, depending on what you're freeze drying, it can actually take up to three full days to fully freeze dry. Considering the amount of items you freeze dried at once, and especially with how wet they were, the amount of time you freeze dried was pretty short.

Hahaaa this brings back memories of my uni days, I worked as a lab assistant after I finished my masters and I used a freeze drier just like that when doing wet vs dry leaf weight measurements ...freeze dried sweets are far more exciting than leaves 😂

Yes, your explanation was really good! The frozen food goes from ice to water vapor. The reason that the vacuum is needed is to lower the boiling point of water, so it just evaporates! (At least I think that’s what I learned in my food science lab 3 weeks ago). That’s what allows most of the shape/color of the food to be the same (rather than oven dried where things turn brown). And the reason a lot of things expanded was the trapped air inside the candy expanding in the vacuum! SCIENCE! In the lab we freeze dried food samples and are analyzing them all semester to compare the food to the nutrition label

And tacky foods may be from leaving the food out as the food will rehydrate from the water in the air. In the lab we use a desiccator to keep foods dry (like those silica beads in foods that say “do not eat”

I make strawberry frosting using freeze dried strawberries that have been crushed up in a blender. Learning about that method has been a game changer. I believe you can buy powdered freeze dried fruit also.
