the “glutened” video is so relatable!! I’m really glad you posted it so thank you so much for that. I have gastroparesis which gives similar symptoms. I worry about it a lot for when I move for school specifically because there’s so many days throughout the month where I can’t even sit up because I get nauseous. I’m glad ur roommate was kind enough to help bc that’s just another fear! I’m scared that ppl won’t be empathetic to it but it’s a very legit chronic illness I can’t control :( Stomach issues suck but after a few hours or days of “glutened” for you and having fat/fiber for me everything returns to normal. I am so sorry to hear that :( I was crushed when I was diagnosed, I felt like my world was ending. I would tell him gently but tell him that there’s so many gluten free options and restaurants now and more and more are coming up every day. It will be okay even though it’s scary and life changing. It shouldn't happen. For some of us, cross contamination = death. I'm actually not shocked but those chefs cannot be in kitchens if they don't understand cross contamination risks. Someone could die.

Honestly it’s not really their job to specifically accommodate for one specific person. If I wanted to be super super careful (like i should be) I really just shouldn’t eat in the dining hall at all.

having allergy and cross contamination training should be required. especially for college campuses where you dont have access to spaces to make your own food safely. if it is not safe you can get an accommodation from disability services to have a personal kitchen to use and be exempt from the meal plan or atleast have it reduced. College campuses if they require a meal plan MUST accommodate your needs. As long as there is no open flour in the area there is no reason for dinner services to be unable to accommodate your needs with separate prep area and equipment. stay safe
