I use soya chunks and i find boiling them for 15 mins and then rinsing them in cold water a few times. I then marinade mine and leave overnight - then i fry them. A bit more of a faff but they are great

I hope you are buying the non gmo soy,because most soy in western countries are Gmo type,not good for health.Boil the soy chunks for 5 minutes,drain them and wash a couple times squeeze out the water,you can cut them up or mince them make like meat balls adding other ingredients or just fry them in oil and get them lightly brown.You can make terrific curries, especially Indian ones with soya chunks.
