I like the way you build the argumentation. Seems to me that you could go more one step or two in terms of take the hypothesis seriously sometimes. For instance: notice that 1 swimming treat, no matter how deadly and impossible to defeat or escape from alive, hardly could cause noticeable effect in the advancement of navigation. Because there was already a large number of things to kill people travelling through the oceans in wooden ships; among this things other people travelling through the oceans looks like, but also unpredictable hurricanes and the unpredictable absence of wind. As long as you have only one Leviathan it would make no difference at all in your chance to came back home alive, cross it in a caravel would be deadly for sure but there is a lot of ocean to travel and very few Leviathan to cross your way. If there was a entire specie of leviathans, immortal divine monsters, then yes. At some point the number of leviathans make sea travel economically impossible. I can't imagine what number is that, but is far above 1. On the other hand if the nice fellows existed since before us, they would have changed far more than the adventures of Portugal and Spain around 1500. Sea travel is far older than that, if it was for all practical purposes impossible Ancient History would not be the same, could not exist any human being on American Continent to keep their lives up there.

I don't think that the leviathan can be killed, even if we have technologically advanced weapons. The scope of weapons mentioned in the book of Job that can't damage the Leviathan was meant to incorporate the whole scope of weapons at the time. Because biblical books are meant to be meditative literature, the context (though written hundreds of years ago) can be brought to today's times. If the Leviathan was really a creature God placed to show off his power, it would be very likely that guns, bombs, warships, ect can't damage it either. Even the fact that it says that his scales break through iron like swatting straw implies that it has more density and potentially even more power than anything made of iron. Even the book of Job itself is meant to portray the idea that God's knowledge, power, and intentions can not be tied down, and thus shouldn't be questioned either. The Leviathan (along with the "Behemoth") were symbols of the power of his creations, and logically his power as well. So more than likely, an eternal God with eternal power would have designed these symbols of power to also be eternal. The Leviathan is most likely immortal.
