There is nothing special call ESB testing. either it has to be code review or functional testing. because ESB is not development. its configuration code. if you can tell me what exactly you are looking for then I may be able to help you.

Well, I have to test an application which now integrated with middle-ware (Mulesoft). As a tester how would be my approach to test various APIs using any tool (like SopUI, Jmeter or Postman). I was thinking that like ..traditional testing tester would get a build..need to deploy in QA/desired region and start testing? Is that same concept?

IBM Datapower is used as a web-service gateway or just as API proxy to your application . it provide authentication and filtering too . Can be used for application analytics too. you can use Datapower to protect you WSO2 ESB too .
