I got a bottle of Sophia Balsamico Vinegar IGP of Modena for some salmon I plan to cook up tonight. A friend served it 20 years ago and I've never forgotten how delicioso it was. I remember sour cream was mixed with the balsamic vinegar, capers, garlic and chives.

This video taught me a lot, thank you! From your info, I garnered I've got one bottle with the Italian stamp, and one bottle without, significant price difference. I am one that is not want to waste, so the cheaper one will be for marinades, and the pricier one with the stamp will be reserved for more delicate recipes- if anything, just to preserve posterity.. Appreciate the info greatly!!!

Great informational video but i suggest that you showcase the difference in thickness during the aging process from 12 to 18 to 25 and bey9nd i believe it can sjow the true art from there

Hello Nima, thanks for this great informative video! I tried the Kirkland organic you mention. But I’m wondering why it reads “includes 6g added sugar” but in the ingredients it reads only “organic cooked grape must, organic wine vinegar” . Why doesn’t the added sugar show up in the ingredients list? Do you know ? Thanks.

i never acquired a taste for it until lately. my bottle cost 10 dollars so probably not from Modena! i am crazy about putting a squirt of it in carbonated water, sometimes with a squirt of wine. its better than Coke and healthier and im glad its made from grapes as it is a good replacement for wine ive had to give up .Long live balsamic vinegar!

I bought a Gourmet Blend which is a local brand but partnered with one of the producers is Italy. Their traditional is aged and thick. Awesome. I don’t buy Costco brand though. I tried one that is locally made in California but it’s flavor is lacking.
