This is perfect! I've never has miso but I've has stuff with soy bean paste in it because my old boss is Korean. I work at an Asian market now and miso is one major blind spot when it comes to helping customers. This really helped me pad out my random jack of all trades knowledge of Asian cooking! Various Asian bosses and youtube cooking shows means I finally have a use for all the random stuff I know for helping customers haha. I knew the ways to use miso but never the flavour and why it was used for those things. I can't wait to try it myself now.

My grandpa used to make misonigiri for me. Miso rice balls. Soo good.

This was great! I always keep doenjang, bc I’ve found recipes on how to tweak/substitute it in Japanese recipes instead of miso. Also my favorite Korean restaurant was kind enough to send me a link to the recipe they use to make their gluten free, gochujang which mixes doenjang and gochugaru. They, of course, put their own spin on it, but I can only tell a slight diff in the taste of their traditional gochujang vs their GF gochujang when I’ve done a blind test.

so miso actually are perfect for family who has a member that don't want it. coz you can always add the miso on your own serving and not theirs doenjang can't do that coz you need to cook it with the whole soup as the longer it is cook the tastier it taste. in short for me miso wins. coz miso can be put at anything you cook with soup and later on add on in your own serving only skipping other family members serving.

Very informative. I have a question. I went to Korean store in America. I found doenjang with koji. Why is that ?

Thank you for comment! it's new stuff, not traditional doenjang. they use rice instead of soy bean. coz some ppl can't digest soy bean well. In this video, I talk about traditional doenjang. But these days, some ppl make alternative items from traditional foods.

Lol it's called doenjang, not Korean miso. Doenjang predates miso. Please use the correct terminology.
