Good resume of SAML - one remark would be that OAuth2 is indeed depending on client-id and client-secret based pre-established trust relationship with the resource server (unless in use for Mobile or Single Page Apps in which case PKCE is used for enhanced security) - but at some point (with or w/o OIDC being used) the user must provide his/her consent and if Google is their IdP (for non-enterprise use-cases like B2C) this is where the users are defined and user attributes can be even invoked by OIDC. So OAuth is more geared towards delegation but in the end you can achieve pretty much the same thing now and most SaaS providers support it.
