If I'm a shopkeeper, I'm the one who decides to rise or lower the price of my product depending on the demand by counting the customers. But what about share? Who raises or lowers the price depending on the demand and supply? Does NSE and BSE have a mathematical formula to decide over the what price a share should be sold in next second depending on available sellers and buyers?

Demand and Supply decides last trade price. If I decide to sell a stock at Rs 1,000 and you agree to buy it at Rs 1,000, then the transaction will go through and last trade price will become Rs 1,000
