Im pretty good on all my oils, their smoke points, and when/how they are best used. My biggest takeaway from this video is how canola oil got its name. You learn something new every day.

In high-end tempura restaurants in Japan, they use sesame oil.... Oh boy... the tempura have such a divine taste. Issue of this oil is price, so not found in many places...

Love tge idea of using oils to work with different foods. How do you recommend storage of oils? They tend to go rancid well before usage has been completed. Should I refrigerate?
