If I may suggest another technique to add to your gnocchi adventure. Pan sear those dumplings right out of the hot water. Use a high smoke point fat, bacon fat is one of my favourites. Get'em nice and golden brown and then add whatever you like. Garlic and chilli flakes with Parm, dill and lemon zest with a touch of cream, or sage and brown butter is absolute heaven. They're cheap too, great way to feed a crowd.

I LOVE this video series. This January I’ve made a real effort to make as few trips to the grocery store as possible and utilize what we have in pantry and freezer. It feels great and watching your videos gives me great inspiration! Funny aside I saw the chub of ground pork in the beginning and thought oh it’s the same brand as we have in our freezer. Only to remember we had purchase half a pig last summer and had it processed at Jerome Market ❤️ we purchased half a pig from a friend of a coworker I work with. I love the security of food in my freezer and also the short journey from farm to table. Hope to do more this year and add some beef and chicken that way too.

Fun to see your "what's for dinner" videos. The gnocchi looked delicious - made me wish I was there for dinner. Love that Todd cooks too. I've been planning my 2024 garden also. I planted garlic in the fall and I made a mistake and ordered short day onions. Should have used long day - oh well, I planted them anyway and hope they do well. Bought seeds when MIGardener had a sale. Will need to refresh raised beds when garlic and onions come out.

I have not seen gnocchi used in that way before and now I really want to try it! Last year I made a BUNCH of potato gnocchi with my potatoes that needed to be used up and have been looking for different ways to use it. Thanks for the idea

@@sheliaheverin8822 I had looked at a few different recipes and watched a few videos before trying it and overall it was not very difficult to make, just time consuming. But then again I made quite a big batch since I was trying to use up my potatoes, it was a great way to freeze the potatoes for use later though

Yummy Yummy. Pork done that way makes more sense and time saver. Love those canned tomato pasta sauce. Our cloves of garlic here on east coast u.s.a. are mini teeny tiny. Did you grow that garlic used in the shrimp dish. Soooo. yummy. I did shrimp cooked in a garlic butter sauce. Flat pasta noodles in more garlic butter sauce. Both with hint of Italian seasonings , salt and pepper. Eat well and enjoy. Thanks for sharing. What about the garlic? Your garden?

My granddaughter is just getting into cooking more so I wrote up the recipes for her to try. I figured I would share them here too. I hope that is okay. Baked Gnocchi Casserole kzbin.info/www/bejne/mKOxf52oaa6NecU Ingredients 1 Pound Pork cooked 1 Onion 1 Package gnocchi cooked 1 Quart pasta sauce 1 Tablespoon garlic 1 Teaspoon Italian seasoning (I added this to mine. It's not in the seasonings he mentioned) Basil, red pepper flakes, salt and pepper to taste Hot pepper hoagie spread or spicy seasoning (optional) Ricotta cheese Mozzarella cheese Instructions 1. Brown Pork in medium sized skillet. 2. Add onion and cook till translucent. 3. Cook gnocchi in medium sized pot. 4. Add pasta sauce and seasonings to pork and mix well. 5. Let pork mixture simmer for 10 minutes. 6. Gently fold in gnocchi being careful not to break it and mix well. 7. Pour contents in greased 9x13 baking dish. 8. Add cheeses and bake at 350° for 40 minutes 9. Let cool for 10-15 minutes before cutting and enjoy Shrimp Fettuccine Alfredo kzbin.info/www/bejne/mKOxf52oaa6NecU Ingredients 1 Pound Shrimp 1 Package Fettuccine noodles 6 cloves of garlic (or to taste) Heavy cream Salt and pepper to taste Cheese. He didn't say what kind or how much but I would say parmesan cheese and about a cup or so. Instructions 1. Cook pasta in medium sized pot per package instructions. 2. He sliced some of the shrimp in half 3. Slightly cook shrimp. Do not overcook or they will be rubbery. 4. Pour heavy cream over shrimp and bring to a boil. 5. Remove shrimp. 6. Place cooked pasta in heavy cream mixture and mix well. 7. Add your cooked shrimp and cheese to pasta mixture and mix well. Enjoy

I was curious about the garlic you pulled from the freezer - I have a TON of garlic planted this year & have been trying to think of ways to help keep it fresh but then I seen you put the cloves in the freezer, do you notice any sort of difference in flavor? Then I seen you put it into the microwave, how long was that for? 🤔

I mic them for like 10 seconds, just to soften them. They do change flavor, some of the "spice / hot" goes away.

I just ordered your garden planner. Can't wait to start planning! I haven't had a vegetable garden since I was 19, so it's been 50 years! My husband built me four tall raised beds so I don't have to stoop over for planting, weeding, etc. I've got seeds for the veggies we like, and I need to plan out where to put what to use the space I have available efficiently. Your planner looks like just the ticket! I live on the other side of the mitten, about 20 miles from your favorite Amish store. My favorite too!

On those enamel cast iron dutch ovens, how do you care for yours. Do you wash like normal or more like the normal cast iron. I ask cause I noticed my husband washed one of mine and when I lifted the lid there was rust on the rim where it doesnt have enamel on it and on the lid and Im not sure what to do to prevent from next time.

I never use a recipe unless its something really off the wall, and then its usually just for inspiration. I cook professionally for about 7-8 years long long ago, so I learned pretty early how foods taste. - Todd
