Protip. Plumbers putty (not the epoxy the butyl that stays soft forever) is designed for sealing joints that will have movement. It's perfect for an additional sealant in some of these kinds of installations. It's cheap insurance.

before installing the shore power plug I recommend testing the resistance of the connections of each wire with a multimeter. things will be easier to adjust while it's all outside the van

Since this was filmed last summer I have a feeling you have done a bunch of work to this since then but I do recommend putting a way to close the water way into your water holding tank with a shutoff valve or something because while I want to believe the world is a good place living in a van for multiple years I know it is not. Your rubber flap to the water tank looks easy to access so people could siphon your supply or add whatever they want to it. Just something for added security like a simple twist ball valve in on the inside.

Always better to use a flexible wire inside vehicles. Building wire like that can become brittle over time with vibration and break cores.
