I was raised that way too, especially by my grandmother who always taught me never waste food. It’s just my husband & myself but I always make a 4-6 portion dinner & we both have leftovers for lunch the next day & anything left from that usually goes into the freezer to take to my dad when we drive to visit every month in NC. Kristin is definitely the MVP when it comes to the effort/love she puts into making his lunches!

I just found your channel. I'm so glad I did. It's given me some great ideas. Things I know he will definitely appreciate. I mean, I always give leftovers for lunch, but I never thought about cold pasta salad, especially during the summer. I will keep watching, plus watching what's for dinner. Some taco sauce or enchilada sauce on those taco pizzas would of been good too!! Also if you like burritos I make a one pot wet style burrito meal! Taco seasoning, enchilada or taco sauce, beans of your choice I do black beans or pinto, shredded cheese, and ground beef, then cut up the tortilla and throw them in and mix well with more cheese on top and let it melt

I always need more lunch ideas! I RARELY eat out at my job. My go to is definitely a big salad and I bought the same container you have! It really helps keep the lettuce fresh and other toppings not soggy. Highly recommend to anyone!

I was so happy to find your videos. I needed some new ideas for lunch. I am a nurse manager and have basically lived at the hospital during the pandemic. Due to the staffing challenges, even our cafeteria has limited offerings and she just can’t eat a hamburger every day. I started packing my lunch in order to have healthier foods, but I was running out of ideas

I have made the dill pickle pasta salad and love it! The recipe I use has you soak the drained but still hot pasta in a cup of pickle juice for 20ish minutes. After that drain off the excess and make the pasta salad. It’s a game changer!

@@cc-sb1is I don’t boil the pasta in pickle juice. I Boil pasta in water, drain it, then pour the still hot pasta into pickle juice to sit for 20 minutes. Then drain off the extra pickle juice and make the pasta salad.

You always do such a great job! For taco pizzas in the future, you might consider mixing refried beans with some taco sauce or salsa of your choice and using that are your "pizza sauce" - really good! Then just top with seasoned ground beef, cheese and once cooked, fresh, chopped tomato, onion, lettuce and onion are nice to have atop (or you could pack them on the side so nothing gets mushy)

I made a cheeseburger pizza once it was really good. I mix mayo and ketchup with a little pickles juice; thats the base. Then top is with ground beef, grilled onions, and and cheddar cheese. Bake untill cheese is melted and just before serving top with sliced pickles. Yum

I have never see turkey burgers at the store. My husband doesn’t care for them, but I like them, and would love to have some for a quick lunch for myself. I’ll be looking for them next grocery run, as well as the fried pickle dip. Great lunch ideas! 😊😊
