While I love my OneNote, I love having paper too. There is just nothing that substitutes the pen to paper effect for me.

What's the biggest disc size do you think you would be able to use with the desk agenda? I'm thinking there seems to be more versatility with this than rings

I wouldn't do anything above a 1 inch ring. I have .75inch rings in mine.
