Wishing you a very Happy New Year. It's almost time to start planting seeds here also. I start mine inside a clear tote that I can cover and that works great for me.

Jeff here. Looks like a big cold spell is coming for January. Last year it snowed 8 inches and was down to zero degrees on January 15&16th! That’s got me slowing down a little. Real cold is coming!!

I haven't tried mine. I grew some and they have been in the fridge awhile now. That sounds like a good way to do it.

I love beets, but this method transforms them into something truly delicious.

Good morning. I'll be starting onions and peppers in January. A heat mat is a game changer for peppers. I love pickled beets my dad always canned them. Have a great day.

Hi Ben, Tick tock, tick tock, I'm counting down the days to seed starting time. I'd start seeds on January 2nd, except it is my birthday, and I celebrate it by doing absolutely nothing, so January 3rd will kick off my my seed sowing session. The first batch will kick off with onions, cabbage, cauliflower, and broccoli. It will be followed by tomatoes, peppers, basil, dill, and cilantro. I'll finish with Tokyo Bekana Mustard, Romaine Lettuce, Pak Choi, Swiss Chard and assorted flowers. Usually, around the Feb 20th, I start direct sowing seeds, but if the weather plays nice, I may get an early start. I'll start with snow peas, shelling peas, radish, and I'll fill in some gaps with assorted lettuces (Merlot, Black Seeded Simpson and whatever other seeds I have mixed in). This is also when I plant my cool weather seed starts. This morning, I cleaned out the chicken run, and spread a fresh bale of chopped straw. Three five gallon bucket loads of decayed straw mixed with chicken poop went onto the top of my compost piles. I also cleaned out the nesting boxes and lined them with straw, and cleaned out most of the bedding inside the chicken coop, and put down fresh pine shavings. There is another full five gallon bucket, mostly poop mixed with pine shavings for the compost. The chickens went nuts, digging in the straw, and exploring the nesting boxes. Maybe this will convince Trixie and Ariel to start laying? Trixie has been squatting for about a week; Ariel squatted for the first time today. The next thing on my to do list is collecting eggs. Goldie and Bella have been steadily laying six eggs a week. Oh, cleaning the chicken coop and run is by far not my favorite chore. Tossing in a few handfuls of cat litter into the bedding has drastically improved the odor.

Since beats grow in clusters of 2 or three or even four I plant mine around 8 in apart and I start them about 4 weeks ahead of time inside

Happy Holidays! I too have never been able to order seed potatoes, onions or garlic from any of the catalogs because they ship too late for my zone/area. So frustrating to say the least. Local garden shops either sell inferior or getting away from buying big orders cause they can't sell enough to justify the cost. We want to start cabbage, broccoli, lettuce, peas. Rutabagas if we can find seeds! I plant out my beets direct-4 per sq. ft. or 3-4" apart in 2 rows 12" apart. I try to pack them in in rows. I'll cover them with frost blanket. Already feeling like I'm running behind schedule! I'd love to plant/start seeds "with you" live it will help my overwhelmed brain to focus and motivate.

Just an idea. If you can get organic potatoes and garlic at your grocery, you should be able to grow those. Onions you can grow from seed; make sure you get the right type for your area.
