I stumbled onto this video & omg I'm hooked! I love your energy & humor. Then when your husband pulled out the eggs from his hoodie - that was priceless & hysterical. Now I need to find out what you did with the lemon seeds. Can't wait to check out your other videos.

kind of an oxymoron that nchfp tells you you cannot can things with eggs, but then approves this curd recipe LOL. great ideas, loving this series

My mouth is watering... AGAIN! And its ALL your fault! (And the cutie patootie taste tester of yours!) His reaction is reason enough to make your lemon curd!! The problem for me is... I have no idea what to do with lemon curd! I'll be 113 in trucker years in a few days & I have no idea how to use lemon curd! Sooo... help a sistah out! Please? Thx in advance. God bless! 🙏

It's like a super rich lemon custard. Actually, I think that exactly what it is. Mr. Reeve's advice involves eating it right out of the jar, but most people use it in lemon bars, topping for cheesecake, you know all the healthy stuff. Searched for how to can lemon juice. 23 CU FT Freezer fail in progress. Lemon juice, mango, arils and rhubarb today. The sold meats will hold fine til tomorrow.

@@FlatTireFarmHomesteadingAlaska Thanks. It has really gone very well. I got rid of things I knew I was NEVER going to eat short of death from starvation looming. (I had put them up for others who have moved away). Then I started working very systematically through things in order of how rapidly I could expect them to start thawing and their mass that would predict what might keep frozen longest. There was already quite a lot of ice in there. I prep each late summer for our big canning season. I didn't expect to put anything up this year. I'm still recovering from being pretty sick from some treatments and I'm in pretty good shape. I had a 20 lb bag of ice in there already, and a bunch of frozen 2 L. I stayed out of it except to shop my specific list for the day. Worked great. All that is left is a 12½ lb ham. It's in the fridge in the house. After 3 repair companies told me "We don't repair them. They just make those little ones to throw away", I finally asked the guy why everyone kept saying this was a small freezer. It's 23 cu ft!! He STILL gave me the same song and dance so I decided they must all be right. In under two minutes he called back and apologised and said "We DO repair them. That's a big one". (duhhhh). Then he told me what it cost to replace it (I about fainted) and quoted prices. As soon as the part is here, just a thermostat and a relay, it will be fixed again. I'll sure be eating a lot of canned food again this year LOL So there's a step by step plan for whoever might need it for dealing with freezer failure calmly in a hot summertime climate (we broke records for 100°+ days, lots way over that since our state started keeping records in 1858. (?). Many if not most of the days during this little episode were over 100°.

I just did the lemon curd. Getting the zest off them is a pain in the fingers and this takes a long damn time. Definitely worth it!

@@FlatTireFarmHomesteadingAlaska my grater is a finger eater! I hate that little bugger! The lemon curd is amazing! Definitely will make it again. I also saved the white stuff.. can’t spell the name of it and the voice to txt doesn’t understand me. It is in the freezer waiting to be boiled for pectin! My daughter want some lemon sugar bad so I will be zesting the rest of the lemons 🤨 but I can’t complain too much because she stirred the curd for almost a half hour today for me! I made a double batch and got 10 jars! That surprised me.

@@Mindy56743 that’s so awesome! I’m so glad you’re finding this useful. My advice for using the pectin that didn’t make it into the video is this: when you go to make jam, get the berries or fruit juice to boil, then add the pectin and boil for a minute or two, Turn the heat off the, jar it and process like usual. I think I ended up with only a soft set in my raspberry jam because I added the pectin too early and it broke down too much before I jarred it. Your daughter was a shining star today.

I have come to the realization that it's essentially a good way to preserve eggs. A protein rich dessert. 11 eggs!

@@Mindy56743 yes you can totally use bottled lemon juice. You can also use bottles lime juice! Mmmmm. I’ve been thinking about pasta for egg storage too. How do you store it? Dry it and it’s shelf stable? Or in the freezer?

@@FlatTireFarmHomesteadingAlaska it is supposed to be shelf stable but I plan to do a test on that. I am planning to do a huge batch dehydrating it and leaving some at room temperature and freezing the rest. I will check on the room temperature at 3 and 6 months to see how it goes

Yum! I have never made lemon curd! Will definitely have to get that on my shelf! Have you ever tried using a steam bath canner? I just got one and it literally is a game changer. It uses so little water and way less energy than a traditional water bath canner. Thank you for another solid video!

Hey friend, great question. I find that the taste is a little more bland and not as “fresh” tasting as fresh squeezed. However, it tastes soooo much better than store bought. Store bought is so bitter, reminds me of earwax. Ha! Thanks for the question.
