Fast food goes way back before medieval times. Ancient Romans had street food. You could get what was basically bread with meat and other things.

I'm surprised you didn't mention kolaches (or Klobásník, if savory) a central European dish made by placing stuffing (fruit, meat, cottage cheese. etc) on a layer of dough and then rolling it up.
