Some of our favorite Summer dishes in a new "What we eat in a day" video.
Breakfast: tofu scramble with green beans
We need:
Tofu - 1 pack
Green beans - 200-300g
Tomatoes - 2-3 pcs.
Garlic - 2 cloves
Turmeric
Paprika
Coriander
Black salt
Hot sauce (Tabasco Smoked)
Snack: raspberry smoothie
We need:
Raspberries (to taste)
Banana - 1 pc.
Soy milk - 200 ml
Add some sweetener if the raspberries are too sour.
Lunch: stuffed pattypan squashes
We need:
Pattypan squashes - 2 pcs.
Rice (dry) - 50 ml (cook in advance until half ready)
Tomatoes - 100g
Garlic - 3-4 cloves
Green coriander - 1/2 bunch
Spinach - 1/2 bunch
Red pepper
Blue fenugreek
Coriander
Paprika
Cumin
Olive oil
Salt
Dinner: baked aubergines with greens
We need:
Aubergines - we had 5 medium sized
Green coriander - 1 bunch
Basil
Juice of a half lemon
Tahini - 1-2 tbsp
Garlic - 1-2 cloves
Olive oil
Red pepper
Salt
