I live in South Africa and live kneading my own bread, until I made your bread today, so quick and easy and delicious. I also make my own pasta but today I made bulk pasta for the first time too. I don’t know if you have ever tried it but to peel your eggs a little easier if you crack it just a little and then stick a spoon under the shell it almost peels it completely together, and it super quick.

In December my hubby broke his ankle. In January I slipped on the ice and broke my back. So…. February Pantry Challenge was started. Our first time! We are loving it! Forced us to go through and use up those unusual items that have taken up space. This is also helping us use our garden bounty that we worked so hard in canning in 2021. Thank you for sharing your life with us!

I'm also doing the pantry challenge. I also order from Azure Standard. when i get any cheese i buy 2 - 5 lb. bricks, 1 I slice (I work at a restaurant) and shred the other. Last month I got pepperjack and cheddar. and i had left over cranberry sauce from Christmas so I made grilled cheese with pepperjack and cranberry sauce. Becky, I love your channel.

I live in Lexington ky zone 6 b. Every year I over winter cold hardy lettuces, chard, kale with hoops and row covers. We just had 10” of snow and it’s totally fine. You could definitely do this in zone 8

I get so excited every time you post! I think I'm addicted. 😂 In all seriousness, thank you for taking the time to make these videos, even though I'm sure it's difficult at times. I've learnt so much and I'm getting more excited about growing my own produce in the future to be more self sustainable and with cooking and preserving (at the moment I'm working on just keeping houseplants and herbs alive 😅). I'm doing the pantry challenge with my own rules where I look for the older stuff I've got in the pantry and try and include it in my cooking (or as a side) wherever possible to use it up. I'm trying to make 1 meal a week entirely with the things I have in the pantry. It's working well so far for us considering my husband and I live on 1 income. Excited to keep watching and read everyone's comments about how they're going with this pantry challenge. 😊

Hi Becky , I’m so in love with your personality and enjoy your style..you have definitely motivated me differently in the kitchen.. I just have one request when you are cooking on your stove can you please turn on your overhead microwave light to give more light at the stove when cooking please.. sometimes it seems a little dark over there the light may help thank you ,and happy new year💜❤️💜❤️.

Happy Sunday! You are an inspiration! I love your videos! I’ve watched this video a few times and as many videos as I’ve seen on inspiration, yours actually motivates me into action. I watched your video this morning after I woke then I got up to make morning tea (not coffee drinkers here) and as I was making tea and doing the morning kitchen chores I pulled out the items on the first shelf by the stove. Shelf by shelf as I drank my first cuppa I got that whole cupboard done. Now just 5 more and my gluten free shelf(I’m the only one in this house that’s gluten free) to clean and organize! Thank you, Becky! For all that you do, I appreciate you! I’m working on starting my own channel but a bit of learning curve. I’m failing forward! 💪🏼

I'm only half way in and I just want to say you are awesome. I also wanted to let you know how I learned 2 of the things you did. One tip I learned about bread rising better as well as warmth is keep the salt away from the yeast. Mix it more into your flour after everything else. And the eggs I do for 4 min. In the insta pot. Your doing great! You said you didn't like the word rules for this challenge... so how about goals, or guidlines?? Anyways I love that your using pantry items that you have had for a little while.... Have you tried egg salad? Mash eggs, add mayo/must/sweet relish/salt/pepper! It's delicious!

Egg salad is the best! I can also recommend adding dill and/or sour cucumber if fish is the main dish. I also like to add soysauce when making Japanese inspired eggsandwiches.

You can dehydrate veggies and fruits you don't wanna use and it preserves them for a year if opened and 6 years if vacuum sealed.

Yet again an inspiration to us all. I’m trying to use up those miscellaneous ingredients in the kitchen AND although I’m not doing this pantry challenge I have decided to make a more conscious effort to limit my grocery shopping to once a month. And I do have almond flour to use up so that banana bread recipe sounds perfect!! I’m going to whip it up now. Thanks!!

Hi Becky! You should look into getting a butter crock/butter bell. It will keep your butter safe and spreadable on the counter at room temperature. It will make buttering your banana bread much easier. :)

This is fun! I’m kinda doing the same thing but I’m on week 1 right now. I agree with not using the word rules. I prefer to use the word goals. It’s more empowering to meet a goal than it is to stick to a rule. I’m definitely going to try the no knead bread and probably the almond flour banana bread because I too have a big bag of almond flour that I used for 1 thing lol. Looking forward to many more weeks of ideas!

Girl!! Search for Quinoa Pilaf. It is really good will use up your quinoa. I also use dried cranberries instead of raisins. Also, there is a good rice a roni recipe for the Instant Pot.

I'm about to purchase my first acre property and I am super excited, your channel has been very informative and I love your energy and positive attitude. A month or so ago, my husband and I decided that we need to 'eat out the freezer'. We do a decent job rotating the meats to eat the oldest first. We struggle to remember to eat the frozen meals we freeze. I know you don't make a menu, we do 2 - 3 weeks at a time. When we freeze 3 cartons of home made soup, it gets added right away to the menu as freezer soup.

I have an almond flour chocolate chip muffin. It’s the best. I actually make it X4 and they freeze so well. My husband eats two everyday. We also swap out different kinds of choco chips. Peanut butter chips is our favorite. 2.5 C almond flour 1 teaspoon baking soda 2 eggs 1/3 cup sucanat 2tsp vanilla 1/2 cup cocoa powder 1/2 tsp salt 2/3 cup maple syrup 1/4 Cup butter melted 3/4 cup choco chips (white or pb can sub) Mix ingredients together, I add butter after it has cooled a bit at the end. Original recipe says bake for 350° for 13 to 15 minutes. But I have found we like them better baking at 325° for 18 minutes.

Tip on peeling eggs! Put 2 at a time in a mason jar. Cover the top with your hand, give the eggs a shake back and forth a couple times then swirl them around like a barrel roll a few times. When you pull the eggs out the shell literally slips off. It’s amazing and so easy!

I don’t have a big food reserve to got through but I do have some random things. I’m inspired to use those items! Most of them came from the store during the early pandemic when food was scarce and they gave us random substitutes.

I have found peeling eggs underwater in faster. The water acts as a bit of a lubricant to separate the peel from the egg and the pieces of shell float away.

My favourite almond flour recipes are the almond lemon cake by Natasha's kitchen and orange chocolate cookies by thevegan8 (I use honey instead of maple syrup)

My rules are #1: Only buy fresh produce and staples, like milk/eggs/coffee, once a week. I have young children and they need lots of fresh vegetables and fruit. #2: No buying pantry or freezer items unless I'm hosting or bringing food to an event. I host a lot of things at my house and get asked to bring food to events. #3: I love your idea of pulling out items that have been stored for a long time. I recently used up a couple cans of chickpeas, a canister of quinoa, dried coconut, and some spices to make a sweet potato and chickpea curry. I also made a pumpkin spice baked oatmeal and used up a can of pumpkin puree, chia seeds, and oats. Thanks for all the inspiration. Keep it comin'!

We use quinoa in place of oatmeal. It makes amazing breakfast bowls. Just add fruit, nuts, honey ….. yum.

this is definitely giving me some inspo! i gotta say i dont know much about baking, but i know that salt can kill the yeast so maybe with the cold temperature and adding the salt so early on it might have been a reason why your bread didnt rise so well. usually i add a tiny bit of sugar with my warm water and yeast and let it bloom before i add the flour, once ive added a decent amount of flour i add the salt so im sure not to kill the yeast. But, again, i dont know a lot, its just something ive experienced as well:)

I noticed you butter your banana bread when eating … a yummy thing to do is to “sizzle” the bread. Something my Gran used to do for us (as a way to rejuvenate getting stalish bread I’ve come to realize) when we were kids, was to sizzle the bread in a buttered pan until carmelized. If you add a bay leaf to your dry products, it will keep them fresh longer, keeps bugs out and more... just a tip...

I have never used a rice cooker! just do this ratio 1 part rice to 2 parts water or broth. get the liquid to a boil, while its getting to a boil, rinse the rice, then add to the water once it gets to a boil. make sure that you then stir in the rice well and let it boil for 2 minutes. then turn to low, and let simmer COVERED for 18 minutes. dont check on it. then fluff with a fork and turn the eat off. dont mess with it for 5 minutes and then its ready!

I would add the ranch powder you make to the goldfish mixture as well for a different flavor.

I have say your channel becoming one my favorite. Because you show when you mess up and not every one perfect. So far I organized my spices and made your lasagna and no knead bread.

We live in a small town and have gotten to the point where we don't eat out much either. Food quality at many of the restaurants has declined and prices have risen while our paychecks have not. But really it is the fact that I can make better meals.

Oatmeal is my favorite food so any oatmeal, including baked oatmeal is a friend of mine. Butter is also a delicious food group that I love so it was good to hear you discuss the quality of your butter 🧈 😋

Just a thought? Could you freeze dry some of the red onions and add them to your salt, for a different level of onion flavor or even a hint of sweetness? (Red onions seem to be sweet almost like the purple ones to me.) Or even for a sprinkle addition to salads? (Just the freeze dried onions alone, that is.) Just thinking out.......loud 🤔 sorta?? 🙃😉

When I don’t use all my bone broth I pour it into ice cube trays and after frozen I put them in zip lock bags so I can use what I need later

I just love your channel. As a city dweller that always bought everything in a grocery store, it somehow makes me nostalgic - must be something natural to humans to want to grow, prepare and store their own food. At the same time, I can't believe how much stuff you made! I think I'd never be able to do it, and would be all - OK, so done now, uber eats it is! :)

Ok fun fact, the homemade Rice-A-Roni made me stop the video rewind go to the store and have it for dinner. Just finished cooking along side you making this dish and Oh my Lanta it is fantastic. Best thing I would say i have made in a long time, roommates loved the heat, and love the fact I follow a fellow PNW creator Gardner I live in Tacoma WA and so learning the best crops that my household loves to grow here is the best.

Almonds are high in oxalates. That’s the only negative I know of regarding almond flour. In moderation, it’s fine to use.

Corn tortillas are so easy to make, healthy as corn can be, and delicious... And for some unknown reason, people seem to think I'm magic when I'm able to do it! 🤷

Becky I understand what you are saying about calling them "rules" maybe you could follow the title and say "The Challenges I am giving my self are ______ ______ ______ & _________ " You decide what Challenges you need for Your Pantry Chalenge! By the way, I love the meals you are cooking! So fun to follow you. I am a long time gardner. Over 55 years of having my own gardens. I also can and dehydrate food but I don't think I will get a freeze dryer, I'm afraid they are too complicated to hook up. I LOVE your skillet! WOW.

Try the Penzy’s Southwest Seasoning if you can! It is my favorite go-to seasoning! BTW that octagonal pan is awesome! I want one!😁😂
